Meal Meal Planning: Weekly Dinner Plan – Week 13

Hello everyone! I hope you had a good weekend. We visited a couple of beaches for my next travel post on the best beaches to visit when visiting Vancouver (I love my job!). That post should be on the blog by the end of the week.

A meal plan is a great way to save money at the grocery store and solves the daily question “what’s for dinner?” It also save loads of time in the evenings after work. My favourite part. I use a Google spread sheet for my menu plans, but you can use whatever you feel comfortable with or what works for you – a simple notebook, a scrap of paper tacked to the fridge, or you can find some meal-planning notebooks here.

This week, we’re having some old favourites as well as some new recipes from theskinnytaste.com and mediterraneandish.com, and a lovely Prawn Coconut Curry broth and rice from The Looneyspoons Collection . I LOVE this book and, amazingly enough, I’ve made almost every recipe of theirs. It’s also geared for weight loss.

Here’s this week’s meal plan:

Monday: Crockpot Picadillo with rice (Skinny Taste)

Tuesday: Kenyan Braised Collard Greens & Ground Beef, Sweet Potatoes (Skinny Taste)

Wednesday: Mediterranean Pan-Seared Trout w/Tzaziki (Mediterranean Dish), Asparagus, (The Best!) Greek Salad (Looney Spoons)

Thursday: Simple Mediterranean Olive Oil Pasta (Mediterranean Dish), Garlic Bread, Green Salad.

Friday: Prawns in Coconut Curry Broth (Looney Spoons), Rice

Saturday: Grilled Rosemary Lamb Chops (on the barbecue!) (Skinny Taste), Salads (Looney Spoons)

Sunday: Garlic Rosemary Chicken with Cranberries (Mediterranean Dish), Roasted Potatoes, Beans, Carrots.
