Vegetarian Cooking

Hi everyone! I skipped last week as we were in the middle of moving to the beautiful Sunshine Coast. To read about that, click here.

Well, I didn’t lost any weight the week before last 🙁 We were so busy exploring our new home and trying out different pubs and restaurants, that I completely fell off the wagon! The food here is so good. The good news is that I jumped back on the wagon on about Wednesday and managed to lose a pound! Here’s hoping this continues.

There are so many beautiful beaches and trails here, it’s hard to find an excuse not to get outdoors more and walk. And that’s exactly what we started doing on Thursday. There are lots of hills here, so it was quite challenging and certainly got the heart-rate going! But I’m confident that walking 30 minutes a day is going to help the weight loss and improve my general health. I’m already starting to sleep better, which is a good thing.

This week, I chose some of the recipes from random websites I found on Pinterest. They look really delicious:

Monday : Vegetarian Shepherd’s Pie. When I was growing up, Shepherd’s Pie was a staple in our house and always my go to for comfort food. So I was really happy when I found this vegetarian version of it!

Tuesday :  Falafel and salad

Wednesday: Vege balls (from Ikea) and Simple Mediterranean Olive Oil Pasta (This is becoming a staple in our house)

Thursday: Pizza

FridayTomato & Basil Soup, Garlic Bread

Saturday:  Creamy Pasta & Broccoli

Sunday: One-Pan Gnocchi with Sundried Tomatoes and White Beans
