Vegetarian Meal Plan

Hello everyone! I missed last week due to contracting some kind of cough/tummy bug thingy – uugh! Fortunately, it only lasted a few days. Before I started on this (almost) vegetarian path, this type of virus would have lasted 10 days or more! I’ve also been taking 4 vitamin C pills a day which may have contributed (vitamin C helps keep you looking young too!). So in between packing (and cleaning) to move to the Sunshine Coast on Thursday (read more about this here) and this stupid virus, I haven’t had much time for anything else.

This week I lost another pound (woo hoo!), although I’m not sure if it’s because of the tummy bug or my change in diet. All the meals we had last week were delicious., Unfortunately, the eggplant didn’t agree with hubby, so that’s off the menu for him – not for me, though! I loved the Eggplant Rollatini and there was plenty left over for lunch the next day.

I’ve been having smoothies every day for breakfast and enjoying it. However, I do think that this week I would like to change things up a bit and so have decided to incorporate oatmeal or muesli, and avocado on toast into my breakfasts. I’m still struggling with not having the typical eggs and bacon for breakfast, because that type of breakfast used to be my favourite meal. I capitulated and had eggs for breakfast this morning and within a couple of hours, my seborrhea dermatitis flared up! Grrrr. Bad timing considering I had a hair appointment later on! Oooh, but I luurve eggs so much 🙁 . I also fell off the wagon in the sugar department and had a chocolate bar after supper a couple of times and added an extra teaspoon to my coffee every morning! Eeek!

So, I just finished watching the movie Fork Over Knives on Netflix and have a renewed resolve to pull myself together this week. Breakfasts: Oatmeal and fruit, Avocado Pesto Toast and Green Smoothies. Snack: nuts. Luncheas: leftovers or a salad. Sweet Snacks: fruit.
