Meal Planning: Weekly Dinner Plan-week 18

Hello everyone and welcome to week 18 of our weekly dinner plan – and another cocktail to try!

This week is a mixture of comfort food, and food for the barbecue, from two of my favourite food blogs – Skinny Taste and The Mediterranean Dish. Also, a special treat on Wednesday – a picnic!

A meal plan is a great way to save money at the grocery store and solves the daily question “what’s for dinner?” It also save loads of time in the evenings after work. My favourite part. I use a Google spread sheet for my menu plans, but you can use whatever you feel comfortable with or what works for you – a simple notebook, a scrap of paper tacked to the fridge, or you can find some meal-planning notebooks here.

COCKTAILS ANYONE?

Did anyone try the Apollo’s Fury last week? I’m sad to say that I didn’t get a chance, but will make up for it this week! Another new cocktail to try this week – Kiwi Smash. This recipe was taken from the magazine Taste

 

Kiwi Smash

 

makes 2 drinks

1 1/2 oz (45 ml) Vodka
1/2 oz (15 ml) 2:1 simple syrup
3/4 oz (22 ml) lime juice
1 kiwi, peeled (save one slice for garnish)

After peeling a kiwi fruit, slice off a piece to use as garnish. Cut the remaining kiwi into smaller pieces and place in a cocktail shaker. Muddle the kiwi well before adding the vodka, simple syrup and lime juice. Shake with ice and strain over ice in a glass. Garnish with a kiwi slice.

Monday –  Mediterranean Oven-Roasted Spanish Mackerel

Tuesday – Easiest Pasta and Broccoli

Wednesday – Picnic! – Mediterranean Watermelon Salad, Shrimp & Zucchini Panzanella Salad Board, No-Mayo Mediterreanean Tuna Salad with Zesty Dijon Vinaigrette

Thursday –  Tumeric Braised Chicken with Golden Beets & Leeks 

Friday –  Naked Greek Feta-Zucchini Turkey Burgers

Saturday – Garlic-Rosemary Chicken with Cranberries

Sunday –  Mediterranean Shrimp Orzo Soup
