Hello Meal Planners! Monday seems to come around far too quickly, doesn’t it?
A meal plan is a great way to save money at the grocery store and solves the daily question “what’s for dinner?” It also save loads of time in the evenings after work. My favourite part. I use a Google spread sheet for my menu plans, but you can use whatever you feel comfortable with or what works for you – a simple notebook, a scrap of paper tacked to the fridge, or you can find some meal-planning notebooks here.
This week, I have three delicious recipes from The Diet Doctor website. Who knew dieting could be so delicious? Also, a couple of old favourites that can be done on the barbecue, and a lovely new recipe from Skinny Taste.
Buuut, before we get into all that:
I still have some rum leftover from last week’s cocktail (hard to believe, I know!), so I though I would try the following:
Melon Crush Cocktail
1 1/2 oz (45 ml) Rum
1 oz (30 ml) Melon Liqueur
3/4 oz (22 ml) fresh lime juice
8 green grapes, plus extra for garnish (optional)
1 melon slice, for garnish (optional)
Place grapes in a cocktail shaker and muddle well. Combine rum, melon liqueur and lime juice and shake with ice until very cold. Double strain over new ice and garnish with either slice of melon or grapes.
Here’s this week’s dinner plan:
Monday – Stuffed Cabbage Casserole
Tuesday – Pesto Chicken Casserole with Feta Cheese and Olives, Carrots and Green Beans
Wednesday – Italian Sausage & Beef Meatballs, Spaghetti, Green Salad
Thursday – Chicken Breasts with Herbed Butter , Broccoli and Spaghetti Squash
Friday – Union Cantina Lobster Tacos
Saturday – Dinner Out 🙂
Sunday – Grilled Rosemary Lamb Chops, Salads
Have a wonderful week and let me know if you tried any of these recipes – or the cocktail! Also, take a look at our wine pairing series – posted every Friday.
