Hello everyone. I hope you had a wonderful weekend and for those you who celebrate Easter, I hope you had a wonderful Easter. We had a Roast Lamb feast!

A meal plan is a great way to save money at the grocery store and solves the daily question “what’s for dinner?” I use a Google spread sheet for my menu plans, but you can use whatever you feel comfortable with or what works for you – a simple notebook, a scrap of paper tacked to the fridge, or you can find some meal-planning notebooks here.

This week’s meal plan is:

Monday: Crock Pot Carne Guisada (Latin Beef Stew). We actually didn’t get to have this last week  🙁

Tuesday: Lamb Stew (using lefover Lamb from Easter Sunday’s meal)

Wednesday: Spaghetti and Meatballs

Thursday: Slow Cooker Barbacoa Beef

Friday: Skillet Chicken and Broccoli Vege Tot Pie

Saturday: Kenyan Braised Collard Greens and Ground Beef

Sunday: Out for Hubby’s Birthday 🙂
