Hi everyone. Well, it’s not quite grilling weather yet, but it’s warming up and the sun is starting to shine more often than not. My daffodils are in full bloom and the Roses the Clematis are budding and growing – so it’s looking promising. We spent a few hours at my favourite fishing village in Steveston yesterday for Good Life Saturdays. You can read about that here.

Buuut, this week we’re having comfort food. Our budget is a little tight and we have working men to feed!

A meal plan is a great way to save money at the grocery store and solves the daily question “what’s for dinner?” I use a Google spread sheet for my menu plans, but you can use whatever you feel comfortable with or what works for you – a simple notebook, or you can find some meal-planning notebooks here.

Monday: Stuffed Zucchini – Recipe from The Mediterranean Dish

Tuesday: Meatless Chili – Recipe from The Looneyspoons Collection

Wednesday: Garlic-Roasted Chicken with Gravy – Weightwatchers New Complete Cookbook, Sweet Potatoes, Veg. and rice

Thursday: Unstuffed Cabbage BowlsUnstuffed Cabbage Bowls (this is becoming a regular dish around our house) – recipe from Skinny Taste

Friday: Shepherds Pie with Parmesan Potatoes – Recipe from Weightwatchers New Complete Cookbook

Saturday: Tuscany Chicken – Recipe from The Looneyspoons Collection

Sunday: Beef Stew – Recipe from Jamie Oliver’s Food Revolution.
