Weekly Dinner Plan - Week 11


Hello and welcome to Meal Planning Mondays and week 11 of our weekly dinner plan.

I hope you all had a wonderful weekend. My weekend seemed to go by a little slower than usual (there’s a first for everything!). Things have been so hectic around here lately, I spent Saturday and Sunday afternoon catching up on Season 1 and 2 of Outlander!

A meal plan is a great way to save money at the grocery store and solves the daily question “what’s for dinner?” It also save loads of time in the evenings after work. My favourite part. I use a Google spread sheet for my menu plans, but you can use whatever you feel comfortable with or what works for you – a simple notebook, a scrap of paper tacked to the fridge, or you can find some meal-planning notebooks here.

This week, I’m making meals out of Jamie Oliver’s book, Jamie’s Food Revolution. It’s simple, affordable (a household word in our house) food and has recipes for beginner cooks onwards (or upwards 🙂 ). I’ve owned this book for about 5 years now and I still love all the recipes (although I might need a new book soon as this one is looking a little, er, worn out!)

Here’s this week’s dinner plan:

Monday: Lasagne  I LOVE Jamie Oliver’s Lasagne. I don’t like the texture of Ricotta Cheese, but this Lasagna uses sour cream and parmesan cheese for the sauce, making it silky and creamy. Love!

Tuesday:  Mini Shell Pasta with a Creamy Smoked Bacon & Pea Sauce. My hubby loves pasta and this is a cheap thrifty and quick pasta meal that satisfies everyone’s tastes.

Wednesday: Roast Chicken, Baked French Potatoes, Best Ever French Beans (these are yummy), Baked Creamy Leeks. My daughter made her first roast chicken from this Roast Chicken Recipe, a couple of years ago when she was 24. She said it turned out perfectly! 🙂

Thursday:  Leftover stew from the weekend.

FridayHardly-Any-Prep Shrimp Stir Fry. This meal literally takes 10 minutes to make. Jamie’s description of this is – “This is the kind of recipe where you can swing by the grocery store on your way home from work, pick up a few bits, and have a great meal on the table within ten minutes of arriving in your kitchen.” What’s not to love?

Saturday: Chicken Chow Mein(from leftover Roast Chicken). This recipe is a great way to use up leftover chicken. The Chicken Fajitas are also good for this.

SundayLamb Rogan Josh . I love a good curry, and lamb is perfect for this dish.
