My (Almost) Vegetarian Life – Healthy Snacks and Jar Salads

Well, I’m not sure exactly how much weight I lost this week because my scale gave up the ghost. I don’t know anyone else that’s happened to! We ordered a new one, but it hasn’t arrived yet. I can say that my clothes are slightly less tight, so I must have lost something.

My lack of planning with my snacks ended up in my not eating any and ending up hungry most days. In fact, I had a small melt-down on Thursday which led to a family meeting where we decided to buy and make a week’s worth of snacks so that this doesn’t happen again.

After a bit of research at the grocery store, the Special K protein bars won over all the other stuff.  These will be my after-supper snack for when my sweet tooth is the strongest. I also bought some cookies to take to work and have one with my tea every afternoon. Having got the sweet tooth taken care of, I boiled some eggs for my mid-morning snack and then cut up some vegetables and added a cucumber dip that hubby made for those in-between hunger pangs.

I am ready this time! It’s a learning curve.

I also decided not to take leftover suppers to work, but make jar salads instead and use up some soup I have in the freezer. Less calories. I spent a little time this afternoon doing this

Just keeping it simple this week with cucumber, tomato, chicken and lettuce with a balsamic dressing. The dressing goes in first and then the more solid ingredients

and ending with the more delicate ingredients like the lettuce

When you’re ready to eat it, just turn the jar upside down so that the dressing coats the salad ingredients – and eat.

Hopefully, I’ll be more successful at being not hungry this week while still losing weight.

Saturday: Balsamic Roast Vegetable and White Bean Pasta

Sunday: Mini Turkey Meatballs and Vegetable Soup
