I missed the last couple of weeks – this house has been sick, so only Chicken Noodle Soup and Whisky hot toddies were on the menu!
We seem to be recovering, but are still hankering for comfort food, so this week’s menu is just that.
Monday: Turkey/Lasagna Soup. This isn’t exactly “soup” per se, but it’s Lasagna in a bowl and so delicious we had seconds and then had it for lunch the next day! I can make this in bulk and freeze it too!
Tuesday: Chickpea/Tuna Salad – something nice and light but also filling and packed with protein
Wednesday: Vegetarian Shepherd’s Pie. I grew up with the ground beef version of this and it’s always been my favourite comfort food. Hubby said that if he didn’t know better, he wouldn’t have known this vegetarian version had no meat in it!
Thursday: Baked Shrimp Taquitos, Salad. Again, something nice and light for when you’re not feeling so hungry. The sauce can be frozen for another time or used later in the week in Tacos.
Friday: Tuscan White Bean Skillet. Next to Mexican, Italian is hubby’s favourite food. This dish checks all my boxes – it’s a one-pot meal (minimal dishes to wash), it’s delish and I can make it in bulk and freeze it.
Saturday: Vegetarian Breakfast Skillet. Breakfast for supper! Nothing better.
Sunday: Mexican Rice and Bean Skillet
