Hi Guys. The comfort food last week seemed to do the trick – we’re feeling almost normal again 🙂
I haven’t even been near the scale last week as ‘comfort food’ also included a couple of bags of chips while watching a movie or two, not to mention the chocolate. I think we all need a cheat day every so often.
Buuuut, today I’m back on track. Last night I made all my jar salads: a couple of those very delicious Cobb Salad in a Jar with Buttermilk Ranch Dressing, a couple of Caesar Salads from my Looney Spoons Collection cook book, and a lovely Greek Salad from the same book – Yummm.
This week’s menu is all about using up ingredients I already have in the fridge, freezer and pantry. I seem to have accumulated a lot of food over the last couple of weeks. Not only can I save some money at the grocery store, but I hate wasting food and would feel horrible if I had to toss it.
Tuesday: Chicken, Shiitake & Wild Rice Soup
Wednesday: Grilled Shrimp & Vegetable Bowl
Thursday: Breakfast Pizza – I love breakfast for supper and this “pizza” looks delish!
Friday: Zucchini Rollatini – this has become a favourite in our household
Saturday: Date Night!
Sunday: Simple Mediterranean Olive Oil Pasta – love this dish.
