Back on track finally and I lost 3 pounds last week! Whoo hoo! I did things a little differently this time. Instead of having leftover suppers for my lunch, I’ve been having a salad instead. And absolutely NO sweets! I have a horrible sweet tooth, but this week a small yogurt after supper satisfied my craving.
With the weather getting warmer (finally!), I’ve chosen a few lighter meals that are easy to prepare with very few dishes to wash:
Monday: Mediterranean Bean & Broccoli Pasta
Tuesday: Loaded Mediterranean Omelette Recipe
Wednesday: Sheetpan Italian Chicken & vege dinner
Thursday: Shepherd’s Pie Lightened Up
Friday: Cool Mexican Bean Wraps
Saturday: Date Night
Sunday: Mega Mushroom and Lentil Curry with Tomato, Coriander and Lemony Rice
