My (Almost) Vegetarian Life

We’ve been walking for 20 – 30 minutes every day for about 3 weeks now and I’ve lost about 1/2 a dress size! I have no idea what I’ve lost in pounds because my scale broke and I haven’t replaced it yet. Not sure if I even want to because then I become obsessed about it. I’m much happier this way. It’s so beautiful in the mornings here, we’re really enjoying the walks.

I’m playing catch-up a little this week as we went away for the weekend. Hubby made the Yogurt Chocolate Chip Muffins and Spelt bread today.

They are very yummy and I look forward to a muffin with my tea tonight. A home made spelt bread loaf cost us about $6.50 at the local farmer’s market. This cost us $2.50 per loaf!

I used the first of our chili peppers from the garden last night in our supper, and home-grown green onions too! I makes such a difference to the taste.

Black Pepper

We’re finally getting weather that I like – 28 deg. C and up! But it’s not great for weather for cooking, so I chose recipes that we can either barbecue or that don’t take too long to cook or require an oven:

Monday : Cheesy Zucchini Enchiladas, Mexican Cauliflower Rice

Tuesday : Madison’s Favourite Beef Tacos

Wednesday : Easy Carbonara with Roasted Tomato and Prosciutto

Thursday : Feta & Spinach Fritatta

Friday : Greek-Style Bake Cod with Lemon & Garlic, Best Roasted Greek Potatoes

Saturday : Out 🙂

Sunday : Leftovers
