Hi all. It’s been a busy weekend! After almost two years on worker’s compensation, hubby has been cleared to go back to work! Yay! It’s been that long since I made packed lunches, and this weekend I decided to keep it simple until I could come up with more, er, creative but not too time-consuming, ideas.
So we decided on roast beef sandwiches, Italian Pasta Salad (without the pepperoni), and boiled eggs and home made snack bars for snacks. Instead of buying processed meat, I bought a roast beef, roasted it this morning, and then hubby sliced it thinly
This is just a small amount of it. We’ve probably got enough for about 10 days’ worth of sandwiches.
And then I made an Easy Italian Pasta Salad, minus the pepperoni.
That made 2 meals. I made enough boiled eggs for him to make an egg salad sandwich or two for breakfast as well.
With summer coming to a close, I picked quite a bit of the herbs from our garden and infused them in oil, re-using bottles that had had various kinds of vinegar in them
I dried the Oregano and Thyme in the cooling oven from the roast beef and added them to my spice rack.
This week’s menu is a mixture of Mexican and Spanish with a little bit of comfort food in between:
Monday : Vegetarian Pizza with pesto sauce from my well-used Looney Spoons Collection
Tuesday : Stuffed Tortillas – Looney Spoons Collection
Wednesday : Spanish Tuna & Potato Salad
Thursday : Tofu Stir-fry – Looney Spoons Collection
Friday : Unstuffed Cabbage Bowls
Saturday : Date Night!
Sunday : Mexican Lasagna – Looney Spoons Collection
