It’s cooled down quite a lot since my last post and it sure feels like Fall…ish. We’re still waiting for our tomatoes to ripen, but the Swiss Chard is growing like a weed and I’ve picked enough of it to add to a stew (tonight’s dinner) and one of our favourite meals – Kenyan Braised Collard Greens from Skinny Taste.
I discovered a very delicious, yet non-fattening breakfast from Skinny Taste that I’ve been having for a few days due to my buying 6 avocadoes and having to eat them every day so they don’t go bad – Hummus and Avocado Toast – 2 slices are only 248.5 calories! And they are both filling and tasty.
That said, here’s this week’s menu:
Monday – Jamie Oliver’s Stew with home-grown Swiss Chard
Wednesday – Simple Mediterranean Olive Oil Pasta with Shrimp
Friday – Vegetarian Shepherd’s Pie
Saturday – Date Night!
Sunday – Won Ton Soup, Garlic Knots
