My (Almost) Vegetarian Life

This week is a clean-out-the freezer week. I have some ribs and a lovely roast that needs to be eaten soon, so this is the week to do it. I luuurve roast beef & yorkshire pudding!

I didn’t lose any weight this week (might be the glass of red wine every night), but I did’t put any on either! I also joined the local gym and started walking on the treadmill for 20 minutes a day. By Friday, I was actually starting to enjoy going and will step up the time on the treadmill from 20 minutes to 30 minutes starting tomorrow. In addition, I’ve been doing 10 minutes of resistance training – squats, push ups – and am actually really enjoying it.

Breakfast every morning is a fruit smoothie with a scoop of protein powder and a tablespoon of oats. Lunch is soup.

Sunday : Roast Beef, Yorkshire Pudding, Carrots & Peas, Rice, Gravy

Monday : Baked Ziti with Spinach

Tuesday : Chicken & Broccoli Stirfy, Rice

Wednesday : Quick & Delicioso Cuban-style black beans

Thursday : Slow cooker ribs

Friday: Tofu Stir Fry with Udon Noodles

Saturday : Out 🙂

Sunday : Mediterrean Bean Soup with Tomato Pesto, baguette
