Good morning from Halfmoon Bay. We are well into the loooong, dark, rainy days of winter. Thank goodness we got our yard work done yesterday as part of our Operation Clean up (well, except for the porch stones) because it’s raining today.
These are the kinds of days that make you want to curl up on the couch and drink hot chocolate, hot tea, hot toddies … anything hot really … and eat things with names like Hearty Vegetarian Pumpkin Chili, Vegetarian Shepherd’s Pie & Chicken Pot Pie Empinadas with gravy. And this week, we’re going to do just that.
I’ve been taking soup to work every day. It’s much easier and I love soup. There are so many different kinds, I don’t think I could ever get tired of it. This week’s soup is Weightloss Vegetable Soup. I used to eat a version of this when I was in my 20’s, except I had it for supper every night, and it was very filling and delicious. And yes, I lost quite a bit of weight.

Saturday : Creamy Garlic Butter Tuscan Shrimp
Sunday : Hearty Vegetarian Pumpkin Chili
