My (Almost) Vegetarian Life – Cheesy Enchiladas, Rattatouille and More

HellOoo Vegetarian lovers (and some meat lovers too). I hope you’ve all had a good start to the week. Are you all ready for Christmas? I can finally say that I am. Christmas is a pretty low-key event in our house focused around food, drink and relaxing. This weekend I finished off my Christmas shopping and got the tree and decorations ups. To read more about that, click here.

Last week I lost 3 lbs – woo hoo! I’m getting there. It’s fortunate that I adore the Italian Soup with Meatballs from the Looney Spoons Collection, because I ate it every day for lunch last week. I couldn’t believe how delicious the Cacio E Pepe was from Jamie Oliver’s new Italian cookbook. It was only 4 ingredients, but it was stunning. I’ve added it to our favourites list. I also made the best corn muffins, also from the Looney Spoons Collection, and there was some left over for breakfast the next day 🙂

There’s a lot less meat in this week’s menu and quite few favourites :

Monday : Cheesy Zucchini Enchiladas

Tuesday : Easy Rattatouille Recipe

Wednesday : Shrimp Taquitos, Broccoli Pesto Couscous (Jamie Cooks Italian)

Thursday : Mediterranean Zucchini Casserole

Friday : Roast Chicken, roasted potatoes, beans and carrots

Saturday : Leftover Chicken Pot Pie Empanadas (this recipe is for turkey – perfect for Christmas leftovers)

Sunday : Chicken Skewers and Potatoes (Jamie Cooks Italian)
