Hi everyone. I hope you all had a wonderful holiday. I had the nicest time off. It’s wonderful to spend time at home and just mooch around and enjoy. It’s back to work for me today after 10 lovely days. I must admit, I’m having a little trouble getting back into it. Typing, spelling and, well, thinking, are all a bit of a problem today. The good news is that there are only 3 working days this week which gives me plenty of time to get my brain working again.
I don’t know about you, but I certainly spent a lot of time either over-eating, or eating all the wrong things and I put on the 3 lbs that I lost a couple of weeks ago. These past few days I’ve had to wean myself off chocolate all over again and resist the urge to have a snack every hour or so! I’ve decided to step up our vegetarian meals this year with a view to eventually eating very little meat at all. However, we have quite a bit of meat in our freezer which I don’t want to go to waste, so I’m aiming for 4 vegetarian meals a week.
Breakfasts for the week is my regular fruit smoothies for a few days and Overnight Oats with Almond Butter, Banana, Strawberries and Chia for a few days.
Lunch this week is Slow Cooker White Bean Soup with Ham Hocks.
