My (Almost) Vegetarian Life – Meatless Week

HellOooo. I hope you’ve all had a wonderful week. It’s been raining a lot here, but the temperatures have been 10 deg. C above what we normally get here. We’ve even had some double digits! I can live with that.

I lost the 3 lbs that I put on over the the Christmas holidays – so that’s a good thing. Now I just have to keep that up for a month or two!

I tried to add a couple of overnight oats meals to my breakfasts this week, but, after having smoothies for so long, my stomach found the first attempt too heavy! Today, I added some more liquid to the oats and heated it up and it was much better. It certainly kept me full until lunch time.

I have decided to throw all caution to the wind and make next week all vegetarian meals – yikes! I found a lovely blog called Eats Well With Others, that provided a meal plan for a week. The meals look delicious, so I decided to give 5 of them a try and incorporate a couple of dishes hubby loved from last week.

Thursday : 7-Layer Vegetarian Burritoes

Friday : Spinach Lasagna Rolls Ups

Saturday : Date Night!

Sunday : Homemade Spinach Manicotti – this was a huge hit and SO easy to make. I must admit that I was a little daunted at having to make the crepes (Crespelles), but they were really easy and delicious!
