Hello All. I realize I missed a week or two. Where does the time go?
While I love to cook, I do not love to come home from work and spend an hour doing it every night (and all the clean up that goes with it). And that’s what I was doing these past few weeks while trying out new vegetarian recipes. It just became too much work and we ended up going out for supper on Wednesday and opting for bacon and eggs on Friday night :D.
So I did a re-think on how to save time and have delicious and healthy meals on the table every night. I decided to make a couple of slow cooker meals this week and we had a roast beef yesterday, the leftovers of which will become a lovely Ragu on Wednesday. Hubby also made vegetarian lasagna from our Thug kitchen recipe book which made more than enough for 2 people, so there’ll be leftovers of that also. Nice and simple! I love the slow cooker.
So, here’s the menu for this week:
Monday : Pulled Pork in the slow cooker, green salad
Tuesday : Margarita Pizza
Wednesday : Beef Ragu on ribbon noodles, green salad
Thursday : Summer Cavatelli with Corn, Tomatoes & Zucchini
Friday : Date Night!
Saturday : Slow Cooker Ham & Cabbage Soup
Sunday : Leftovers
