You may remember last week I confessed my undying love for chocolate. Well, I managed an entire week without chocolate (or any other sugar, for that matter) – except one teeny tiny bar on Wednesday. And I didn’t even miss it! Amazing what you can do when you ‘decide.’ My goal for this week is to start yoga and walking on alternate days – I can’t wait!
I must confess that I really don’t like water much at all, but I know it’s really good for me and essential for a healthy life, so you can imagine my delight when yesterday I discovered lime water! Yes, yes, I know I’m a little slow, but club soda with a couple of lime slices in it is so delicious and refreshing, it’ll make me drink more – which is a good thing. Much tastier than lemons in my opinion.
Janet and Greta from Looney Spoons fame, created this lovely anti-bloat drink, which I’m also going to try this week.
I’m trying to save money, so this week’s menu includes quite a few leftovers. We have a new butcher in town who supplies fully organic meat. They have the most wonderful chicken sourced from a Hutterite farm in Alberta. These chickens have access to shelter but generally spend all their time outside with easy access to food and water. They are given many greens from their organic vegetables. They are also three times the size of chickens we buy in the supermarket, but are not more expensive. The taste is incredible and because they’re not ‘puffed up’ with water injected under their skin to make them looker fatter, they don’t have the excess ‘wobbly’ fat that I find so awful. You all know what I mean, right? We usually get 3 full meals out of these chickens plus meat for a couple of sandwiches for lunches.
Here’s this week’s menu:
Monday – Roast Chicken, leftover warm potato salad (from yesterday’s barbecue), carrots and broccoli
Tuesday – Left over vegan Lasagna from Saturday night’s supper – from Thug Kitchen “Eat Like You Give a F*ck”, Green Salad, garlic bread
Wednesday – Baked Tiella Rice from Jamie Oliver’s “Jamie’s Italy”
Thursday – Chicken Empanadas using leftover chicken from Monday’s roast, Sweet Potato Fries, Green Salad
Friday – Best Vegan Chili – Mediterranean Style, crusty bread, green salad
Saturday – Date night!
Sunday – Chicken Fajitas with leftover chicken from Monday’s Roast. The rest of the chicken gets made into soup for lunches!
