HellOooo! I hope you’ve all had a lovely week and tried some of the meals in this Blog. I didn’t lose any weight this week (might have been the chocolate bar I wolfed down over the weekend!), but I didn’t gain any either, so that’s a good thing. I’ve been managing about 2,500 steps a day mainly because my little dog can’t walk too far. This week I plan to walk the dogs in the morning and then go again in the afternoon by myself so I can walk a bit further.
The snack foods that I made last week were a huge hit, so we’re going to continue with those this week. I bought a baguette, cut it up into thin rounds and then toasted them which made a great alternative to store bought crackers. They lasted about 5 days in a plastic container and were perfect for dipping. I love that I can change the flavour of them by adding a little bit of garlic or some herbs before toasting.
This week I’m including some foods for hubby to take to work with him. He doesn’t have access to a microwave or kitchen (he’s a truck driver), so I have to make lunches that keep in his little lunch box cooler thingy without going soggy. I chose a four-bean salad and an Italian salad from the Thug Kitchen Party Grub book and put the dressing into a separate little container for him to add just before eating.
We also decided on fruit salad and granola for breakfast. I made very delicious Granola from Jamie Oliver’s recipe
It was so easy – I just mixed everything together and toasted it in the oven for 25 minutes. It was so good I had a handful as an after-supper snack! 🙂
and this delicious Melon and Mint fruit salad which is surprisingly filling and lasts about 3 days in the fridge (although it was gone before that!)
I’ve also been rethinking my use of plastic and how I can use less of it when storing my food. So imagine my delight when I saw a lady at the supermarket selling the Beekind reusable food wraps. They work very similar to cling wrap but are reusable (and washable).

Friday – Vegetarian Sloppy Joes – from Thug Kitchen Party Grub
