I’m finally losing weight … slowly. Since May 24th, I’ve lost about 3 lbs. I’ve cut down on my carbs and included a protein shake for breakfast or lunch. I also started a resistance training program that I do at home every day for about 20 minutes. That’s helping tremendously and I’m getting fitter and stronger in the process.
To keep my sweet tooth at bay, I’ve been eating a lot of greek yoghurt, but I also made Mango Chia Pudding. Oh. My. God. This stuff is delicious! Even my hubby liked it and he is not fond of chia seeds at all.
Here’s this week’s menu:
Monday : Lemon Parmesan chicken with Zucchini Noodles
Tuesday : Spinach Manicotti, green salad, glass of Riesling 🙂
Wednesday : White Bean Shakshuka, Crusty Bread, Green Salad, probably more Riesling.
Thursday : Baked Shrimp Taquitos, Salad
Friday : Greek Baked Meatballs, Rice
Saturday : Date night!
Sunday : Cacio de Pepe (from Jamie Cooks Italian by Jamie Oliver), salad
