Hello all. I hope you had a wonderful weekend. It rained all weekend here 😦 which meant I had no choice but to do indoors-y things like laundry and cleaning (uugh). But it also prompted hubby to make some delicious chocolate chip and almond butter cookies from our well-used Thug Kitchen Book, and I made a huge batch of roasted red pepper hummus at which point I realized that, if I was going to continue to make hummus (and I am), I’m going to need a bigger food processor!
I started walking again. It’s pretty hilly around our area and that’s been my excuse not to go, but I can’t procrastinate any longer and so I just got up and did it. Even though it’s hilly, it’s also very pretty, and I stopped at my halfway point, the beach, to admire the view and have a drink of water
With this as my rest point, I’m looking forward to going tomorrow.
I’m so excited because very soon (in about 2 weeks) I’m going to be featuring these lovely things, and others like it, in my online store, homequestdecor.com. Fish and chicken are on the menu this week, with lots of lovely meatless meals in between:
Monday : Mediterranean Baked Sole Fillet, Mediterranean Orzo with Zucchini & Chickpeas
Tuesday : Easy Carbonara Recipe with Roasted Tomatoes and Proscuitto, Green Salad, Glass of White wine (or two) 🙂
Wednesday : Vegetarian Shepherd’s Pie
Thursday : Healthy Baked Pesto Rigatoni, Garlic Bread, Salad, more white wine 🙂
Friday : Barbecue – Pork Chops, Greek Pasta Salad, Green Salad, probably more white wine.
Saturday : Halfmoon Bay Country Fair – Pancake breakfast, hamburgers and craft beer for lunch, live music. My kind of day 🙂
Sunday : Lebanese Chicken Fatteh Dinner Bowls (leftovers from last night’s roast chicken), Lebanese Rice with Vermicelli (this has become hubby’s fave side dish)
