My (Almost) Vegetarian Life

Hi everyone! I know, I know, it’s been a long, long time since I last posted. Things have changed drastically around here. We made a huge life change and moved from the small holiday town of Halfmoon Bay in British Columbia, to chilly Edmonton in Alberta! Why, do you ask? Mainly family – our children and grandson live here – but also to give us more scope for our online business Home Quest Decor.  Besides, it was getting very expensive to live in BC.

Another drastic change is that hubby went back to being a long-haul truck driver, which means he’s away for a couple of weeks at a time. Buying three meals a day on the road is very expensive, not to mention unhealthy. Truck stop food isn’t exactly known for it’s health benefits. Hubby has a small fridge and freezer in his truck, and he bought a microwave so he can heat up his food, so I framed my menu with this in mind.

Of course, I want to change it up every so often, so I’m experimenting at this stage with recipes that, hopefully, not only freeze well, but thaw well also. I find some dishes, like slow cooker meals where the meat is shredded, thaw into a watery mess – not very appetizing. It also benefits me because those meals form part of my suppers also and I can freeze another one so that I have them the following week as well. This means that in week two, I don’t have to cook very much! I like that a lot.

For hubby’s breakfasts, we chose mostly Mediterranean-style eating – various salamis, grapes and soft cheeses – and for lunch I make 2 or 3 different types of jar salads, like this one, which keep very well in his fridge for at least a week. Jar salads with chicken in them also make good use of roast chicken leftovers! You can also substitute the chicken for turkey which is handy for this time of the year.

So, with all the above in mind, here’s my menu for the next two weeks. I’ve marked the dishes I froze with a red asterisk

Monday : *Unstuffed Cabbage Bowls.  This was a HUGE hit – hubby said he couldn’t get enough of it!

Tuesday: *Vegetarian Shepherd’s Pie.  This freezes very well and thaws as if it was never frozen.

Wednesday: *Mediterranean Shrimp Stew, rice

Thursday: *Taco Empanadas using pizza dough. You can serve this with a green salad, or peas and carrots.

Friday:  Creamy Roasted Cauliflower Chowder.  Hubby isn’t too fond of cauliflower, so this is a good dish to have when he’s away.

Saturday:  *Slow Cooker Santa Fe Chicken, rice.  Not sure how this one will thaw – I’ll let you know!

Sunday:  Roast Pork (from Jamie Oliver’s book Jamie Cooks Italy), roasted potatoes, vegetables.

Tuesday: *Vegetarian Shepherd’s Pie.  Frozen from last Monday

Wednesday: *Mediterranean Shrimp Stew, rice, Frozen from last Monday

Friday:  Night out!
