My (almost) vegetarian Life

I know, I know, it’s been over month since I last posted anything here. Now that Christmas and New Year are a distant memory, things should be a lot more regular around here.

My freezer meals from last month worked out really well. I did enjoy not having to cook every single night, but by the end of last week I was getting tired of soup, chili and vegetarian shepherd’s pie, so this week I decided to change things up a bit. This week’s breakfasts and lunches involve a lot more eggs (I love eggs!). I’ve been having smoothies for breakfast for over two years now, so it’s time to change things up a bit.

Hubby’s truck meals have proved to be a huge success and very economical. I bought an enormous top sirloin roast from Costco (about 15 lbs) for $60.00, and cut it up into 4 individual roasts. I made a delicious stew with 2 of them and a pot roast with the other two. This made approximately 16 meals for him. Both these meals thawed well and were really tasty for his supper. I added potatoes, creamed corn and peas to the pot roast along with the gravy. I also made this baked Ziti which added a further 12 meals for him. So smug right now 🙂

Here’s my meals for the week – all from Skinnytaste.com (love her food) :

Monday :
B – Freezer Breakfast Burritos (I made 6 and froze them to heat up for the other days)
L – Greek Cucumber Salad with Lemon & Feta
S – Red Lentil Soup with Spinach,  Baguette

Tuesday :
B – Breakfast Burritos
L – Red Lentil Soup
S – Crock Pot Chicken Taco Chili, Rice

Wednesday :
B – Egg Salad on Wholegrain Toast
L – Red Lentil Soup
S – Leftover Chicken Taco Chili, Rice

Thursday :
B – Breakfast Burritos
L – Egg Salad Sandwich on Wholegrain Bread
S – Italian Beef & Spinach Meatballs, Spaghetti

Friday :
B – Smoothie
L – Egg Salad Sandwich on Wholegrain Bread
S – Fish Florentine

Saturday :
B – Smoothie
L – Chickpea Salad with Cucumbers and Tomatoes
S – Lemon Chili Shrimp Quinoa Bowl

Sunday : 
B – Egg Salad on Wholegrain Toast
L – Left over Lemon Chili Shrimp Quinoa Bowl
S – Cauliflower Rice Chicken Biryani

And I’m sure that there will be a lovely glass of wine to go with some of those meals!
