Hello everybody! I must confess that I haven’t actually lost any weight this week, but the good news is that I haven’t put any on either! So that’s a good thing.
Meal planning is a great way to organize your meals for the week ahead. You also save time and money in the supermarket! And of course, planning ahead helps you stick to your goals!
I’m always looking for ways to save money with the groceries – that’s why I started meal-planning in the first place. I find buying whole chicken, roasts and brisket is a great way to do that because you can eke out a few meals from one cut of meat.
Last week I froze the Salina Chicken from last Saturday’s dinner, and a Shrimp and Sweet Corn Chowder I made last week from Jamie’s Oliver’s book, Jamie’s Food Revolution, so that’s two meals I don’t have to cook or shop for this week!
This week, I’m going to make a spatchcock chicken and a brisket which I can turn into another couple of meals for the following week! Eating more meatless meals also saves a huge amount of money.

Sunday : Mushroom Strogonoff, Rotini pasta
Monday : Shrimp and Sweet Corn Chowder (from the freezer), with Ciabatta Bread (From Jamie’s Oliver’s book Jamie’s Food Revolution)
Tuesday : Chicken Skewers (from Jamie Oliver’s book Jamie’s Italy), beans & carrots, salad
Wednesday : Salina Chicken (from the freezer), rice
Thursday : Beef Brisket with Red Wine and Shallots, mashed potatoes, broccoli, carrots
Friday : Spatchcock Chicken
Saturday : Mediterranean Olive Oil Pasta
