My (Almost) Vegetarian Life (Truck Meals Resume!)

HellOooo. I realize I skipped a week. These past two weeks have flown by so fast, it was almost like one of them didn’t exist!

Good news – I’ve lost 2 lbs. Not bad considering I haven’t done much exercise.

Meal planning is a great way to organize your meals for the week ahead. You also save time and money in the supermarket! And of course, planning ahead helps you stick to your goals! ClickΒ hereΒ for my guide to meal planning.

Hubby, who’s been off work with an injury since May, is heading back to work on February 1st. To refresh your memories, he’s a long-haul truck driver. To save money and keep him healthy, I started making all of his road meals. He has a small fridge/freezer and a microwave in his truck. To that he added a toaster. So I dug out the recipes that freeze well, and that he loves, and will be getting to work to make them this week. Fortunately, they all contain ground beef and are easy to make. I’ve made them part of our dinners so that I don’t have to do extra work πŸ™‚

For truck breakfasts, we decided on:
Breakfast burritos (these freeze really well and you can take them out of the freezer and heat them up in the microwave. I used to make these for my kids when they were of school age. Saved me a ton of time in mornings – I’m not really a morning person)
Instant oatmeal.

Truck Lunches include buns and lunchmeat, salads for as long as they last in the fridge (he can also buy salads on the road)

As for me, my breakfasts are included in the meal plan below. For snacks this week, I bought some more lovely Cliffs Kits bars from the grocery store, and decided to make Quinoa Chocolate Drops

They look delish!

Just a reminder that I do intermittent fasting and so breakfast for me starts at 11:00 am, I have a snack at 3:00 pm and supper at around 6:30 pm.

Monday
Breakfast – Oatmeal and apple
Supper – Mushroom Strogonoff

Tuesday
Breakfast – Banana Protein Shake
Supper – Unstuffed Cabbage Bowls (Truck meal)

Wednesday
Breakfast – Poached Egg & Turkey Bacon on an English Muffin
Supper – Hardly Any Prep Stir Fry – From Jamie Oliver’s Food Revolution Book

Thursday
Breakfast – Oatmeal & Blueberries
Supper – Pasta Alla Norma

Friday
Breakfast – Scrambled Egg, Turkey Bacon
Supper – Lasagna “Soup” (Truck meal)

Saturday
Breakfast – Banana Protein Shake
Supper – Meatloaf (Truck Meal), Mashed Potato, Veg.

Sunday
Breakfast – Poached Egg & Turkey Bacon on an English Muffin
Supper – Spatchcock Chicken, Veg.
