My (Almost) Vegetarian Life – Comfort Food

Hello everyone. I hope you had a wonderful week. It’s been freezing here in Edmonton. Like, -40 deg. C freezing. But the good news is, it’s going to be much warmer next week.

More good news – I lost another pound! The smoothies were all delicious, so I’m going to keep going with the three I chose last week (click here to see those) until I’ve run out of frozen fruit. The Coconut Mocha Java Frappe was also very delicious.

I managed to drink 2 litres of water every day with ease, and I found myself drinking an extra litre in the last couple of days. I have more energy since drinking more water.

My menu changed a bit this weekend as hubby is making an unexpected appearance (he’s a long-haul truck driver and wasn’t supposed to be back until late next week), so I’m going to make a roast pork on Saturday and use the leftovers for a lovely chop suey.

Next week is all about comfort food. The Butternut Risotto with Leeks was to die for – real comfort food – so I decided to have it again this week.

Monday : Vege Burgers

Tuesday : Unstuffed Cabbage Bowls (This is going to become part of hubby’s truck meals)

Wednesday : Butternut Risotto with Leeks

Thursday : Chop Suey (from leftover pork roast) – from my recipe book The Looneyspoons Collection

Friday : Meatloaf (another truck meal) – also from my recipe book The Looneyspoons Collection

Saturday : Home made pizza

Sunday : Pork chops, sweet potato, beans and carrots.
