My (Almost) Vegetarian Life – Spring is Almost Here

Can you feel it? I’m starting to feel it!!!! That hint of beautiful warm sunshine that can only mean one thing—spring is on the way! I am so ready! 

WHY SHOULD EVERYONE MEAL PLAN?

Good news – I lost another pound!! So the changes I made in my diet last week are working :). I managed 15 minutes of dance exercise every day last week, and am feeling really good that I’m getting my body moving again. Now that the weather’s warming up, I will be able to go for walks again.

I’m still keeping up with drinking 2 litres of water everyday. I drink Kangen water 9.5 and my is loving it!

Hubby also took fruit and vegetables to snack on, and some salads for some of his lunches this week.

Here’s this week’s menu:

Monday
Breakfast – Fried egg, Turkey Bacon, Whole Wheat Toast
Lunch – Salad
Supper – Leek & Potato Soup (from my freezer)

Tuesday
Breakfast – Baked Oatmeal with Blueberries & Bananas
Lunch – Open-faced Tuna Sandwiches with Avocado
Supper – Juicy Baked Chicken Thighs, Sweet Potato, Beans & Carrots (Truck Meal)

Wednesday
Breakfast – Overnight Oats in a Jar
Lunch – Open-faced Tuna Sandwiches with Avocado
Supper – Chicken Chow Mein using left over chicken from Sunday’s supper.

Thursday
Breakfast – Scrambled Egg, Turkey Bacon, Wholewheat Toast
Lunch – Salad
Supper – Home made Marguerita Pizza

Friday
Breakfast – Baked Oatmeal with Blueberries & Bananas
Lunch – Salad
Supper – Chop Suey using leftover roast pork (recipe from Looney Spoons Collection)

Saturday
Breakfast – Classic Egg Salad on Whole Wheat Bread
Lunch – Left over Chop Suey
Supper – Turkey Lasagna Soup (Truck Meal)

Sunday
Breakfast – Scrambled Eggs, Turkey Bacon & Whole Wheat Toast
Lunch – Open-faced Tuna Sandwich with Avocado
Supper – Slow Roasted Salmon with Potatoes (Truck Meal), Salad
