My (Almost) Vegetarian Life – Spring!

I bought some new runners! My old ones had definitely seen better days. The snow has melted and it’s time for me to get outside and walk, not only as part of my weight loss journey, but also because we have some beautiful parks around our neighbourhood and I can’t wait to see them again.

I know I missed last week. I lost another pound that week (yay!). This week I didn’t lose anything, but I didn’t gain either, so that’s a good thing. My body is loving the water. I have so much more energy!

Here’s this week’s meal plan:

Monday
Breakfast – Mushroom & Swiss Cheese Potato Breakfast Casserole
Lunch – Open Faced Tuna Sandwich with Avocado
Supper – Pork Chops (on the barbecue!), Zucchini Eggplan Au Gratin

Tuesday
Breakfast – Overnight Oats in a Jar
Lunch – Open Faced Tuna Sandwich with Avocado
Supper – Risotto with Asparagus & Shrimp

Wednesday
Breakfast – Poached Egg, Turkey Bacon, Whole Wheat Toast
Lunch – Salad
Supper – Mexican Bake (Truck Meal), Salad

Thursday
Breakfast – Cinnamon-Apple Baked Oatmeal
Lunch – Salad
Supper – Stew (Truck Meal), Rice

Friday
Breakfast – Overnight Oats
Lunch – Open Faced Tuna Sandwich with Avocado
Supper – Black Bean Veggie Burgers

Saturday
Breakfast – Mushroom & Swiss Cheese Potato Breakfast Casserole
Lunch – Salad
Supper – Dinner Out!

Sunday
Breakfast – Poached Egg, Turkey Bacon, Avocado Toast
Lunch – Sandwich
Supper – Butternut Rissoto with Leeks
