My (Almost) Vegetarian Life! Losing Weight and inches!!

MORE WEIGHT LOSS

Since starting my weight loss journey at the beginning of February this year, I have lost 7 lbs and am down ALMOST a dress size! Now, I know 7 lbs in 2 months doesn’t sound very much, BUT, when I put on 40 lbs after quitting smoking 7 years ago, I haven’t been able to lose anything in that time. So, I guess, slow and steady wins the race!

I’m still keeping up with drinking at least 2 litres of water a day. It’s made such a difference – I feel that I have so much more energy since doing this.

I’ve also noticed that my love affair with chocolate has come to an end. I had a small chocolate bunny at Easter and, halfway through, I found I didn’t like it anymore. This is HUGE for me. It was almost like an addiction. Now, ice cream on the other hand … well, let’s just say I can’t have it in my freezer.

I loved the lunches I chose last time so much, especially the Zesty Lime Shrimp and Avocado Salad, that I decided to do them again this week.

I have quite a bit of chicken left over from entertaining, so I’ve included it in this week’s meal plan:

Monday
Breakfast – Smoothie
Lunch – Zesty Lime, Shrimp & Avocado Salad
Supper – Kenyan Braised Collard Greens & Ground Beef (Also a truck meal)

Tuesday
Breakfast – Egg & Avocado Toast with Turkey Bacon
Lunch – Zesty Lime, Shrimp & Avocado Salad
Supper – Easy Italian Baked Chicken Breast

Wednesday
Breakfast – Smoothie
Lunch – Open-faced Tuna Sandwich with Avocado
Supper – Simple Mediterranean Olive Oil Pasta

Thursday
Breakfast – Overnight Oats
Lunch – Classic Turkey Club Sandwich Lightened Up (I used chicken instead of turkey)
Supper – 20-Minute Pesto Chicken & Vegetables

Friday
Breakfast – Egg & Avocado Toast with Turkey Bacon
Lunch – Open-faced Tuna Sandwich with Avocado
Supper – Black Bean Vege Burgers, Sweet Potato Fries

Saturday
Breakfast – Smoothie
Lunch – Zesty Lime, Shrimp & Avocado Salad
Supper – Slow Cooker Chicken & Sausage Creole

Sunday
Breakfast – Egg & Avocado Toast with Turkey Bacon
Lunch – Zesty Lime, Shrimp & Avocado Salad
Supper – Vegetarian Shepherd’s Pie

I even managed to fit in a cheeky piece of streusel that I made. 🙂
