My (Almost) Vegetarian Life – New Vegetarian Recipes!

Hello everyone! I hope you’re all enjoying the warmer weather.

WHY SHOULD EVERYONE MEAL PLAN?

I lost another pound week before last, but nothing this week. That’s probably due to the popcorn I had over the weekend. Even though it’s well within my calorie intake for the day, the salt in the popcorn retains water for me. In the next day or two I should lose that water weight (fingers crossed!).

I found some lovely new vegetarian recipes and a delicious cucumber and radish salad to DIE for. I don’t like radishes, but the dressing changed the taste of them. I wanted more and more!

Last weekend I made a HUGE leg of pork. I froze the leftovers, so we have quite a bit of pork to get through over the next month or so. Here’s the photo I posted on Instagram (I seem to have lost the original :D)

Here’s this week’s meal plan:

Monday
Breakfast – Smoothie
Lunch – Zesty Lime, Shrimp & Avocado Salad
Supper – Slow Cooker Chicken & Sausage Creole (Truck Meal)

Tuesday
Breakfast – Smoothie
Lunch – Zesty Lime, Shrimp & Avocado Salad
Supper – Garlic Mushroom Pasta

Wednesday
Breakfast – Avocado Toast with Fried Egg, Turkey Bacon
Lunch – Turkey Club
Supper – Mediterranean-Style Garlic Shrimp, Rice

Thursday
Breakfast – Smoothie
Lunch – Tuna on Toast
Supper – Leftover Roast Pork, vegetables, Cucumber & Radish Salad.

Friday
Breakfast – Smoothie
Lunch – Tuna on Toast
Supper – Spicy Leek & White Bean Stew

Saturday
Breakfast – Smoothie
Lunch – Egg Salad Sandwich
Supper – Chop Suey (from leftover roast pork)

Sunday
Breakfast – Avocado Toast with Fried egg and Turkey Bacon
Lunch – Turkey Club
Supper – Grilled Mozzarella Sandwich
