My (Almost) Vegetarian Life – Time-Saving Meals

Hello everybody. I’m pleased to say that I’ve lost about 10 lbs so far and am feeling really good.

I finally got myself a proper Meal Planning Planner (I LOVE planners).

I was watching a TV show last week – Jamie Oliver’s 15-minute meals – and was really inspired by it. I love to cook, but I don’t want to spend hours in the kitchen. I also want healthy meals to keep hubby (and myself) heart-healthy. Hubby has high blood pressure and Afib, so it’s really important to us to reduce his blood pressure as much as possible with diet, thereby reducing the amount of medication he has to take. These past few months, his blood pressure has come down considerably, so I’m hoping at his next doctor’s visit, they will reduce the medication. I noticed that there are a lot of vegetarian recipes in the cookbook, and so I bought it! Most of the next two weeks’ meals are based on this book and some of them can be found on his website.

I just want to say that I’m not affiliated in any way with Jamie Oliver – I just love how simple and healthy his meals are.

My smoothie experiment from simplegreensmoothies.com, worked out really well, so I picked two more to alternate for breakfast every day. The Meal Replacement Smoothie and The Fitness Fuel Almond Milk Smooth are delicious and keep me full until lunch time.

For snacks I found Dark Chocolate Covered Almonds and Vegan Protein Bars which hubby can also take with him on the road.
