HellOooo lovely readers! Well, it’s a been a rough couple of weeks, I tell ya. And I comforted myself with ice cream, chips and more than my limit of wine. 😫 It started with having to have my beautiful kitty euthanized 😢 and all sorts of things suffered as a result. I put on 5 lbs. After a couple of weeks of feeling sorry for myself, I’m determined to get back on track and so, I made myself a new meal plan complete with healthy snacks to curb my cravings for ice cream. I can even have a glass of wine every evening! 😀
I was in quite a good routine of walking, but that went out of the window also! So I’ll be back walking 30 minutes and Yoga for 30 minutes alternately and a couple of flights of stairs (my basement) in between.
After my two cups of coffee in the mornings (with milk and 1 sugar), my breakfast every week day is a smoothie that consists of 1 cup spinach, 1 cup of unsweetened almond milk, 1 cup blueberries, 1/2 a banana, 2 tablespoons of oats and a teaspoon of nut butter.
On the weekends, I have a poached egg on toast with avocado, and a couple of slices of turkey bacon.
Lunch is either leftovers or a salad: lettuce, tomato, cucumber, with tuna and olives added with a dressing of olive oil and lemon juice.
Afternoon and evening snacks include apples, grapes, carrots, celery, yoghurt, devilled eggs, hard boiled eggs, tuna.
This week is mostly vegetarian since my budget is rather, er, sparse this week 🙄 all taken from Jamie Oliver’s cookbook 15 Minute Meals. Since it’s just me (hubby’s away), I’m having a lot of leftovers.

Wednesday – Mexican Tomato Soup, Chili Nachos, Veggie & Feta Sprinkles
Thursday – Leftovers
Friday – Modern Greek Salad, Spinach, chickpea & Feta Parcels.
Saturday – Happy Cow Burgers, Coleslaw, Corn
Sunday – Leftovers
