We are loving the vegetarian meals, but have decided that we need a couple of meat meals a week. We’re definitely noticing that we have more energy and weight loss, although nothing significant this week.
The Peanut Lime Noodles were really delicious and have become part of our regular suppers. I also made extra and placed it into mason jars for Michael to take on the road with him. If you’ve been following this blog, you’ll remember that Michael is a long-haul truck driver.
The One Pot Pasta Primavera and Hoppin’ John were both really delicious and quick to make. They also made great leftovers.
We did not like the Sheet Pan Veggie Shawarma with Lemon Tahini or the Veggie Meatloaf. With the Veggie Meatloaf, I could taste the oats and it was quite dry. If was to make it again, I would reduce the oats and add mushrooms for juiciness.

Friday – Creamy Mushroom & Vegetable Soup with Barley
Saturday – Pollo Guisada (Latin Chicken Stew with Olives)
Sunday – Leftovers
