We are loving the vegetarian meals, but have decided that we need a couple of meat meals a week. We’re definitely noticing that we have more energy and weight loss, although nothing significant this week.
The Peanut Lime Noodles were really delicious and have become part of our regular suppers. I also made extra and placed it into mason jars for Michael to take on the road with him. If you’ve been following this blog, you’ll remember that Michael is a long-haul truck driver.
We did not like the Sheet Pan Veggie Shawarma with Lemon Tahini or the Veggie Meatloaf. With the Veggie Meatloaf, I could taste the oats and it was quite dry. If was to make it again, I would reduce the oats and add mushrooms for juiciness.

Thursday – One Pot Pasta Primavera
Thursday – Hoppin’ John
Sunday – Leftovers
