Hello everyone! How quickly last week flew by!! Another late post, I’m afraid. We’re in the middle of packing up and moving to British Columbia’s Sunshine Coast (check back tomorrow for our first post about this new and wonderful adventure).
I didn’t lost any weight this week, but I didn’t gain any either! I suspect it was due to the fact that we went to a birthday party on Saturday night and had quite a bit of sugary alcohol (quite and bit) 🙂
I also saved my $70 at the grocery store this week (feeling smug). So far, it’s looking like approximately $140.00 a month! That’s huge in my world.
We didn’t like the Roasted Spanish Mackerel, unfortunately. I think Mackerel is an acquired taste and we just weren’t diggin’ it. However, we luuurved the Balsamic Roasted Veggie and White Bean Pasta. We ate it hot, but it would make an excellent cold salad and it keeps really well in the fridge (we had leftovers for lunch for the next 2 days), so it would be a good salad to take to a barbecue. The Zucchini Rollatini was also pretty amazing. However, the recipe called for Ricotta Cheese, which doesn’t agree with me, so we substituted it with a dairy-free ricotta-like recipe from Thug Kitchen 101. It’s from their lasagna recipe and if we didn’t know better, we wouldn’t have known we weren’t eating actual ricotta cheese! Thank goodness someone thinks up this stuff, because I would never be able to do it on my own.
This week’s meal plan is as follows:
Monday – Baked Rigatoni with Tomato and Eggplant. (this recipe actually has ground beef in it, so I simply left it out). It was so delicious, hubby had 3 helpings!! Yes, three.
Tuesday – Greek Green Beans (Fasolakia)
Wednesday – Mediterranean Olive Oil Pasta
Friday – Best Skinny Eggplant Rollatini with Spinach, Green Salad
Saturday – Pasta Piselli
